Feast on delicacies like the Brasato e Peperoni Secchi—short ribs with sun-dried peppers, arugula, Parmigianoano reggiano, and spicy olive oil—the Fava, Carciofi and Cacio—sautéed fava beans, artichoke, and cacio cheese—and the Radiatori in Cartoccio—pasta cooked in tinfoil with porcini mushrooms, cherry tomatoes, bread crumbs, and shaved parmigiano reggiano.
